11 Dec Dill and Garlic Hemp Cheese
If you choose to eat vegan or are lactose intolerant, you’ve likely learned to adapt to living without cheese. But, there’s no longer a reason that you have to suffer. With the help of hemp seeds and almond milk, you can make a dill and garlic cheese spread that’s completely vegan and dairy-free. It doesn’t take long to make, and it comes out to a consistency that’s similar to cream cheese, so it works well when added to a piece of toast or used as a sandwich spread. You could also serve the cheese with crackers and use it as a dip.
All you’ll need to make the cheese is 1 cup of hemp hearts (hulled hemp seeds), 2 garlic cloves, 3 tablespoons of lemon juice, 2 tablespoons of almond milk, 2 tablespoons of chopped dill and ¼ teaspoon of salt. Adding hemp seeds to the cheese will add protein, fiber and essential fatty acids and will also make the cheese mixture smooth and buttery. If you’re not vegan and prefer a thicker cheese, opt for dairy milk rather than almond milk.
You’ll need a food processor to mix everything into a smooth cheese mixture. Start by adding the hemp seeds into the food processor and blend the mixture until it has the consistency of a thick paste. Next, add in the garlic and lemon juice and run the processor again to mix all the ingredients, which will cause the mixture to come out slightly creamier. Lastly, add in the milk, drill and salt and blend one last time. The final mixture should be smooth, like a cream cheese. If you want the cheese to be thicker, such as to use for toast or a sandwich spread, add in a little more hemp seeds. For a thinner cheese, like to be used as a dip, add a little more milk.
