15 Jan Cherry and Hemp Snack Bites
These chocolate-heavy energy bites feature cherries and hemp hearts and are completely vegan, nut-free and gluten-free. Plus, the little balls are perfect to grab when you need a quick refuel as you’re headed out the door for a long bout of errands or already out and on the go. Because the bites are made with hemp hearts, they’re a good source of fiber, which will keep you from getting hungry, as well as high in protein and essential fatty acids. The cherries are rich in antioxidants like vitamin A, as well as anthocyanins, which contribute to their red color and also provide health benefits like soothing arthritis discomfort and easing muscle soreness.
The cherry and hemp snack bites are quick and easy to make. No oven is needed and all you need is a quality blender or food processor.
¾ cup dried tart cherries
1 ½ cup hemp hearts
¼ cup coconut oil, melted
½ cup warm water
¼ cup cocoa powder, unsweetened
10 dates, pitted and chopped
Pinch of salt
Add coconut oil, dates, water, cocoa powder, salt and 1 cup of the hemp hearts to the blender or food processor and blend until the mixture has a smooth consistency. Stir in the dried tart cherries. Place the dough into a bowl and set it in the freezer for about 20 minutes so that it can harden a little. Use your hands or a small ice cream scooper to scoop out balls of dough. Drop the dough balls into a bowl of the remaining ½ cup of hemp hearts and cover the balls with the hearts thoroughly.
Store the balls in an airtight container and keep them in the freezer. They’ll need a couple minutes to thaw before they’re ready to eat, so to have them ready to go at all times, keep one to two in separate plastic baggies or other airtight container that you can grab and bring with you.
