16 Jan Avocado, Sun-Dried Tomato, Hummus and Hemp Open-Faced Sandwich
You’re an adult, so having a sandwich for lunch may have lost its appeal a long time ago. By having the sandwich open-faced, you’ll lower the overall calorie content of the sandwich and curtail your lunch from being too heavy on the carbohydrates. Avocado is a good source of healthy fats, which will contribute to the health of your health, and protein, which supports tissue repair. Hummus is also high in protein and fiber, which contributes to the lowering of cholesterol. Plus, the sandwich calls for hemp hearts, which not only will offer a needed crunchy addition to your sandwich, but will provide you with protein, fiber and essential fatty acids.

This recipe will make one open-faced sandwich, so double, triple or quadruple if you’re looking to make two, three or four sandwiches.
3 tablespoons hummus
½ avocado, skinned, seeded and mashed
¼ cup sun-dried tomatoes
1 tablespoon hemp hearts
Sprinkle of pepper and sea salt
1 slice whole-wheat bread, toasted
Spread the hummus onto the toasted whole-wheat bread. Mash the avocado atop the hummus and then add the sun-dried tomatoes over the avocado. Sprinkle the sandwich with hemp hearts and then both pepper and sea salt. Serve immediately.
If you prefer to not have your sandwich open faced, feel free to toast a second slice of bread. If you’re following a gluten-free diet, exchange the whole-wheat bread for a gluten-free option.
